As for the file transfer between the desktop and Epoc machine:

since the Psion did not realized the world evolves, there is a serious problem with Macs: the Psions have only the ancient RS232 interface, which, in the current USB and FireWire era, is an unknown thing on Macs. You have either to use an USB/RS232 bridge, or transfer files to/from Psion through some older computer;
for Linux, there is a number of tools which allow to transfer files. Here is a document describing an (untested) way how to do that using standard tools only: PPP_linux.readme

In case you solve the hardware problem of connecting the Psion to Mac, you should be able to use the very same trick as with the Linux. We haven't tested it, though.
